Beetroot & Haloumi Salad


Lately I have been having the biggest beetroot cravings & with the warm weather still around this simple salad is my go to. You can switch up the protein component depending on what you have on hand & if you don't have any haloumi, shaved parmesan is also a delicious option.


Ingredients (Serves 1)

  • A large handful of rock (preferably organic)

  • 1/4 of a fennel bulb cut into small chunks

  • A small portion of organic haloumi (I wouldnt call what I used in the picture a small serve but.. i couldnt help myself :)

  • A small handful of pepitas

  • A small handful of chopped walnuts

  • Protein of choice (I just added two boiled eggs but you could also opt for chicken, salmon, tuna, tofu or even through some legumes through the salad)

  • Half a pack of whole cooked fresh beetroot (you can find in them supermarket in the grocery section normally)

  • Olive Oil

  • Sticky Balsamic

Method:

  1. Put your eggs in a bowl of water & boil or get your protein ready whilst you chop your salad ingredients up

  2. Wash your rocket & fennel well and then let them in a colander for a minute or so

  3. Whilst they are driving cut your haloumi into strips and place them in a fry pan on a medium heat for a few minutes so they warm and get a little bit charred

  4. Whilst your haloumi is heating ,chop up the rest of your ingredients

  5. Place the rocket, beetroot, fennelt, nuts and seeds into a bowl with a good drizzle of olive oil and mix them around. Top with protein of choice & warm haloumi

  6. Drizzle with some sticky balsamic

  7. Enjoy
