This is my go to soup for when the weather starts to cool or if I haven't been getting enough greens into my diet. I have listed the ingredients below but I adapt it all the time to whatever on hand in the fridge and often add half a broccoli or some potato depending on my mood.
Ingredients:
1 tablespoon of olive oil
2 Leeks sliced
3 Zucchini, diced
1/4 of a bulb of Fennel, diced
1/2 a cup of frozen peas
2 Garlic cloves, minced or finely sliced
1.3 litres of bone broth of your choice or vegetable stock (enough to sufficiently cover veggies)
Fresh herbs to garnish (i like water cress, parsley and sometimes coriander)
pinch of nutmeg
pinch of dried thyme
salt & pepper
Method:
Warm olive oil in a large saucepan & saute the leek and garlic for a couple of minutes.
Add the zucchini and fennel and cook for 5 minutes
Add the peas & stock & bring to the boil
Reduce heat to a simmer and season with salt and pepper, nutmeg and thyme.
Let it simmer for around 30 minutes or until it is fragrant and vegetables are soft
Blend until smooth and serve with fresh herbs of your choice
